One Dish Meals

This is a busy time of the year. If you're like me, you can use all of the help that you can get. These one dish meals might make cooking a little easier.

 

Quick Beef Skillet

 

Ingredients:

Frying Pan

  • 1 pound ground beef
  • 1 can Campbell's Beefy Mushroom Soup
  • 1/4 cup water
  • 1 tablespoon Worchestershire sauce
  • 1/8 teaspoon pepper
  • 1 can (about 15 ounces) sliced potatoes, drained
  • 1 can (about 8 ounces) sliced carrots, drained
Directions:

Cook beef in skillet until browned. Pour off fat.

Add soup, water, Worchestershire sauce, pepper, potatoes and carrots and heat through.

Makes 4 servings

Quick Pepper Steak

Ingredients:

 
  • 1 pound boneless beef sirloin or top round steak, 3/4 inch thick
  • 2 tablespoons vegetable oil
  • 2 medium green or red peppers, cut into 2-inch-long strips (about 3 cups)
  • 1 medium onion, cut into wedges
  • 1/2 teaspoon garlic powder
  • 1 can (10 1/4 ounces) beef Gravy
  • 1 tablespoon Worcestershire sauce
  • 4 cups hot cooked rice

Peppers

Directions:

  1. Slice beef into thin strips. (See tip below)
  2. In medium skillet over medium-high heat, heat half the oil. Add beef in 2 batches and stir-fry until browned. Set beef aside.
  3. Reduce heat to medium. Add remaining oil. Add peppers, onion and garlic powder and stir-fry until tender-crisp. Pour off fat.
  4. Add gravy and Worcestershire. Heat to a boil. Return beef to pan. Reduce heat to low and heat through. Serve over rice.

Makes 4 servings

TIP: To make slicing easier, freeze beef 1 hour.

Bacon Potato Casserole

 

Ingredients:

Frying Pan

  • 4 cups frozen shredded hash brown potatoes
  • 1/2 cup finely chopped onion
  • 8 ounces bacon, cooked and crumbled
  • 1 cup (4 oz.) shredded cheddar cheese
  • 1 can (12 fl. oz.) evaporated milk
  • 1 large egg, lightly beaten
  • 1 1/2 teaspoons seasoned salt

Directions:

PREHEAT oven to 350° F. Grease 8-inch-square baking dish.

LAYER 1/2 potatoes, 1/2 onion, 1/2 bacon and 1/2 cheese in prepared baking dish; repeat layers. Combine evaporated milk, egg and seasoned salt in small bowl. Pour evenly over potato mixture; cover.

BAKE for 55 to 60 minutes. Uncover; bake for an additional 5 minutes. Let stand for 10 to 15 minutes before serving.

Chicken-Parmesan Potatoes

Ingredients:

 
  • 1 package au gratin potatoes
  • 3 cups cut-up cooked chicken or turkey (1 pound)
  • 2 1/4 cups hot water
  • 2/3 cup milk
  • 1 package (9 ounces) frozen cut green beans
  • 1/2 cup grated Parmesan cheese

Roasted Chicken

Directions:

  1. Heat Potatoes, Sauce Mix and remaining ingredients except cheese to boiling in 10-inch skillet over high heat, stirring occasionally.
  2. Reduce heat; cover and simmer about 20 minutes, stirring occasionally, until potatoes are tender.
  3. Stir in cheese. Let stand 5 minutes.

Makes 5 servings
